Jo Chan is an Executive Chef from Palmdale, California. After her studies, graduation, and internship, in 2012, she moved to New York City, where she started her career at Nobu Fifty-Seven. From there she went to work under Jonathan Waxman at Barbuto in the West Village. Her time at Barbuto brought her to the kitchen of fellow Barbuto alumni Justin Smillie, who collaborated with Stephen Starr to create Upland. Chef Jo then proceeded to Scandinavia as the traveling Executive Chef for James Beard winner Marcus Samuelsson. She moved to Austin in 2018, where she became Executive Chef at Eberly. She has found a strong community in this city and hopes to deepen her roots here in the coming years. Her new project will combine her love of Italian food with Austin’s unique appetite for high-quality ingredients served in a casual setting.

She undertook her studies and graduated from San Diego State University before attending the San Diego Culinary Institute. Her ability to attend San Diego Culinary Institute was part of an agreement she had with her parents. “I told my parents I would get a college degree if I could go to culinary school. I was so hungry to get there.” After graduating, Chan’s career took her to New York City. “My internship was in New York, and from that point, my career took off. My very first restaurant I worked at was Nobu Fifty-Seven,” she said in an interview.

Chan is a contestant in season 19 of Bravo television’s Top Chef. She is competing against 14 other contestants to win the title of “Top Chef” as well as a grand prize of us $250,000. The reality television show was filmed in Houston, Texas, following the Covid 19 measures and protocols.
